you should roast russet potatoes, skin on, at 400 degrees until they are at an internal temperature of 150 f.
then cool them completely at room temp. put them in the fridge overnight.
the next day shred them with a grater and let them relax in the fridge overnight, tightly wrapped.
the next day, form them with an ice cream scoop, then freeze them completely.  straight from the freezer deep fry at 350
