<p>A terrible idea.</p>
<p>Maybe it works with partridge or grouse, but the elderberries only up the gamey taste of the meat. I&#8217;d heard that in Norway grouse will spend most of their lives eating elderberries and colors the flavor of the meat. This is not Norway and I&#8217;m sticking to venison sausage from here on out.</p>
